This is my first attempt brining/curing. Product came quickly. I contacted the customer services for some advice, and had a brief email exchange with Paul. He had great knowledge, and was incredibly helpful. Excellent service/experience all round.

Smoked Bacon and Ham Dry Cure Mix
Tried the Smoked Bacon and Ham Dry Cure Mix on a bit of a whim and was amazed with the results. Couldn't have been easier. Took some pork belly, removed the rind, rubbed in the amount of cure for weight of meat, into a ziplock bag in the fridge, wait and that was it. Very tasty and really happy with the results.

I used to cure my bacon with various…
I used to cure my bacon with various famous tv chefs recipes etc. and they always turned out too salty, I bought the basic cure mix and did 1.5kg. Of pork loin, 8 days cure and a couple days drying in the fridge and it's perfect, I'll add a few aromatics, like bay and star anise next time. 👍🏻
